You need to mix half the warmed milk with a mixture of sugar, yolks and honey, and add the second half after you mix the yolks and milk well.
Constantly stirring the milk-egg mixture with a whisk, bring the contents of the stewpan to a temperature of 85 degrees Celsius (in no case bring to a boil - otherwise the yolk will curl).
